An early release, traditional method sparkling wine made from hand-picked and hand-sorted grapes from the Yew Tree Vineyard in Oxfordshire. Undisgorged, so the wine is cloudy and continues to evolve in the bottle.
The grapes are whole bunch pressed into a mix of stainless steel tanks and old Burgundy barrels, adding depth and complexity. The wine spends a further 6 months ageing on lees prior to bottling and secondary fermentation.
Grown in Oxfordshire, fermented & bottled in Battersea.
